Royal India Bistro is open for business at 7 Meriam St., where brothers Ravinder and Jatinder Singh are offering a variety of menu items highlighted by their homemade cheeses and yogurts, and hand-ground spices.

Although Royal India Bistro is new to Lexington – it opened Dec. 27 – the Singhs are well-versed in the business. Including their latest location, the family operates seven Indian restaurants in towns outside Boston.

Members of the Singh family own Passage To India in Cambridge and Salem, Jewel In The Crown in Newburyport, Monsoon in Acton, and restaurants in Maynard and Stoneham.

Jatinder Singh worked for six to seven years at the Newburyport restaurant, before talking to his uncle about opening a restaurant in Lexington with his brother.

"I talked to him, and he used to work around this area and told me Lexington would be a good location," Singh said.

Royal India Bistro offers traditional Indian favorites, including homemade dishes that go easy on less-than-healthy ingredients.

“What we plan to do over here is home cooking," Jatinder said. "Not too oily, not too greasy, and everything is home made."

The restaurant has a full bar, and in addition to standard Northern Indian dishes like chicken tikka masala and lamb vindiloo, Royal India Bistro has some less-traditional South Indian dishes, like chicken and lamb dosa and uttapam.

The restaurant is open from 11:30 a.m. until 10:30 p.m. Sunday through Thursday, and until 11 p.m. on Friday and Saturday. Lunch specials are available for $6.95 from 11:30 a.m. to 3 p.m.

The menu offers a range of soups, salads and appetizers, from $1.50 to $7.95. There are rice, tandoori, vegetarian, chicken, seafood and lamb specialties, starting at $8.95. Desserts are also available.

Royal India Bistro also has a whole section of the menu dedicated to naan, a traditional bread, including chicken stuffed naan, garlic naan and Kashmiri naan.

The Singh brothers said they are excited to please diners however they can, including by preparing fresh naan for customers who call ahead to say they have a party coming for dinner.

“We’re ready to make your food however you like it,” Ravinder Singh said. “We’ll leave anything out and if you don’t like your meal, we’ll be happy to take it back and make you something from scratch.”
